Persian Cucumber, Yogurt and Raisin Salad

I had this salad in a lovely Persian restaurant. It was so exotic and delightful. I love the crispy cucumbers with the chewy raisins and then the creamy yogurt to bring it all together. Lovely combination of texture with flavor!

Ingredients

  • 3 medium cucumbers, peeled and sliced

  • ½ cup Greek Style yogurt

  • 15 fresh mint leaves, chopped

  • 1 Tbsp chopped dill, coarsely chopped

  • 3 Tbsp raisins

  • Freshly cracked pepper

  • Sea salt

  • 1-2 Tbsp pomegranate molasses

Directions

  1. In a bowl, combine yogurt, mint, dill, and salt and pepper to taste.

  2. Add cucumbers and raisins then toss to coat.

  3. Drizzle with pomegranate molasses.
