Thyme & Sea Salt Baby Kale Chips

So I kept seeing kale chips everywhere… on blogs and in stores (mind you for $10.00 a bag) but they really are the quickest, most delicious snack ever! I made this recipe with my sister. We chatted about our day for like 10 minutes and presto the kale chips were done and so yum! The thyme adds a nice aroma and brings out the signature, earthy flavor of kale. I also like using the baby kale which is found in some supermarkets (Whole Foods I know for sure in pre-packaged boxes). Baby kale is easier to take off the stem and you get nice equal size pieces of amazingly good and good for you kale chips while also ensuring the baby kale chips all cook evenly.

Ingredients

  • 2 cups baby kale (stems off)

  • 1 tsp sea salt

  • 1 Tbsp thyme

  • 3 Tbsp olive oil

Directions

  1. Preheat oven to 375F

  2. In a glass bowl, toss the baby kale with the sea salt, thyme and olive oil to coat, gently massaging as you toss.

  3. Lay kale in an even layer on a baking sheet lined with foil.

  4. Transfer to oven and bake for 10-12 minutes, until crisp.
