Antep Kofte is from a famous city in Turkey and it is famous for its pistachios! If you look at the picture, the pistachios are so green and vibrant! That’s what makes the city of Antep so known for its pistachios and they are super tasty. A recipe that originated from this city is the popular Turksh kofte with pistachios. Truly if I had pistachios this good and green growing in my backyard I would throw it on anything too. Kofte is a popular Turkish meat dish. I would compare it to the Italian meatball, with its own unique blend of spices as well as unique oval shape. Kofte is a dish originating from the Ottomon empire. Enjoy this recipe rich in flavor and rich in food history! 1 lb of ground lamb (85% lean) 1 large onion, chopped in small pieces 1 tablespoon all spice 1 tablespoon cinnamon 1 tablespoon Aleppo pepper/paprika 2 tablespoons roughly ground pistachios

1) Mix the filling and form into oval shapes. Press the center to cook more evenly. 2)Sauté for each side until center is not red and enjoy! Ideally enjoyed medium well/well.
